Ingredients

For the pita bread:

  • 3 eggs
  • 200 g Greek yogurt
  • 1 dl warm water
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 60 g oat fiber
  • 25 g psyllium husk (fiberhusk)
  • 17 g pofiber
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp Finesse baking sweetener
  • ½ tsp dry yeast

Instructions

  1. Mix all ingredients well in a large bowl. Gather the dough into a ball and let it rest in the bottom of the bowl for 15 minutes.
  2. Divide the dough into equal portions. Lightly wet your hands and the kitchen counter with water and shape the dough into pita breads. Place them on a baking tray lined with parchment paper.
  3. Let the pita breads rise for 45 minutes in a warm place.
  4. Preheat the oven to 180°C (356°F) with top and bottom heat.
  5. Bake on the middle rack for 25–30 minutes. Let cool on a wire rack.
  6. The pita breads will keep for a few days at room temperature. For longer storage, freeze them.
